Should I weigh ground beef raw or cooked?

Either works as long as you use the matching figure. Raw is the more reliable habit, because the cooked weight depends on how hard you cooked it. 100 g raw 85/15 is 215 calories; the same meat once pan-broiled weighs about 73 g and carries roughly 169 calories.

Why does cooked ground beef have more calories per 100 g but fewer per portion?
