The single roll and the cup are USDA household measures attached to the record itself. The ounce and the two-roll line are our own arithmetic from the USDA 100 g figure, not USDA servings, because nobody eats one ounce of anything and almost everybody orders two rolls.

Fried shrimp egg roll. This is the big one. A 64 g egg roll is 165 calories, so it weighs less than a rice paper roll and still carries twice the energy. The filling barely moves: fat is 13.61 g per 100 g against 2.65 g for the fresh roll. The wrapper and the fryer do all of it.
Shrimp sushi roll. At 100 calories per 100 g this is the only version lighter per gram than the fresh roll, thanks to almost no fat, 0.55 g per 100 g. A single piece is 30 g and 30 calories. A cup of pieces, which is roughly a small order, is 150.
The other fried rolls. Swapping the filling changes almost nothing. Meatless is 270 calories per 100 g, beef or pork 272, shrimp 258. A vegetable egg roll is not the light choice people assume it is; it is the same fried wrapper with cabbage inside. Fried wontons and pot stickers land lower per 100 g, 192, but they come six or eight to an order.
Store-bought rolls sit higher than the deli case. USDA's branded records for supermarket shrimp rolls run from 129 to 229 calories per 100 g, with a tempura shrimp roll at 182 and a spicy shrimp roll at 229, because the rice is sweetened and the sauces are already on. A 240 g packaged roll can be 550 calories, which is lunch, not an appetizer.
Sodium is the row to watch
Calories are not the interesting number here. One roll is 4% of a 2,000-calorie day and 12% of the sodium Daily Value, so salt runs three times ahead of energy. Two rolls put you at 560 mg before the sauce, and a sweet chili or fish sauce cup can double that. In table salt terms, one roll is about an eighth of a teaspoon.
The FDA sets the sodium Daily Value at 2,300 mg, and most adults in the US take in considerably more than that. If you are already watching salt, the fresh roll is still a reasonable pick, it just is not free: skip the sauce, or split one cup between two people.
