The salt is the real story

Butter is the line that goes missing in food diaries, because it disappears into hot toast and nobody weighs it. If you want to cut something here without touching the bacon, this is the cheapest 74 calories on the plate.

Three rashers instead of two: 460 kcal

Add a third rasher to the buttered sandwich and you are at 460 kcal, with 17.4 g of protein from the bacon rather than 11.6 g.

That is the version that turns a sandwich into a meal that holds until dinner. It also pushes the bacon's own salt to about 2.6 g before the bread joins in, so the third rasher costs more in salt than it does in calories.

Grilled or fried

Every figure on this page is for bacon grilled, with the fat allowed to drip away. Fried bacon takes on whatever it was cooked in, so oil, lard or butter in the pan lands in the sandwich, and it lands unmeasured.

Grilling is not a health decision so much as a bookkeeping one. It is the only method where the number on the label is still the number on your plate.

Sauce

The verdict: for protein nothing on this table touches the bacon sandwich, at 11.6 g from the rashers alone, and at 388 kcal it lands 127 below a small fried breakfast for a fraction of the effort.
