Frying is the whole story. Steamed wontons are 113 calories per 100 g against 192 fried, so the fryer adds about 70 percent, and the fat row goes from 4.6 g to 11.13 g. Steam or pan-steam the same dumplings and a cup drops from 144 to 85 calories.
