"Loaf cake" is the label to read twice. Entenmann's runs 387 calories and 419 mg of sodium per 100 g against 305 calories and 285 mg for the plain bread, so every 100 g of cake costs 82 more calories and 134 more milligrams of sodium. Kroger's bakery version sits close behind at 378. The word on the package changed; the batter changed more.

The two bakery slices in that table look cheap only because they are small. Ann Marie's 39 g slice is 120 calories at 308 per 100 g, which is denser than the home loaf, not lighter. Read the gram weight before the calorie figure.

Pumpkin muffin is the same FNDDS formula in a paper cup: 305 calories per 100 g, identical macros, different shape. A muffin the size of a coffee-shop dome is simply three or four ounces of the same thing.

Packaged pumpkin bread on US shelves spans 250 to 359 calories per 100 g across six store loaves, from Ahold's own label at the low end to Target's Favorite Day at the high end, with Stone Mill at 286, Outrageous Baking at 298, Base Culture at 316 and Mountain View Bakery at 327 in between. Serving sizes are all over the place too: Mountain View prints 4 oz (113 g) for 370 calories, Base Culture a sixth of the loaf (57 g) for 180.

Sugar is the row to watch

Look at the carbohydrate line again. Of 43.21 g of carbohydrate per 100 g, 22.59 g is sugar — more than half. In a 60 g slice that is 13.6 g of sugar against 25.9 g of total carbohydrate, and the fiber that might have slowed it down comes to 0.8 g, or 3% of the Daily Value. Canned pumpkin is a vegetable; a cup of it in a loaf with two cups of sugar does not make the loaf one.
